Melting Chocolate Pudding Recipe



Method: separate bowls • Prep time: 30 minutes • Cooking time: 15 minutes

Ingredients

  • 7oz/200g dark chocolate.
  • 7oz/200g butter, diced.
  • 4oz/110g golden caster sugar.
  • 4 large eggs.
  • large egg yolks.
  • 1½teaspoons vanilla extract.
  • 2½oz/60g plain flour.

Preparation

Oven
200°C.


Equipment
1 large mixing bowl.
1 glass bowl + saucepan (for melting chocolate).
Electric mixer.
Sieve.
8 mini pudding basins/ramekins, well buttered.
Baking tray.



Method

Place broken up chocolate and butter in a glass bowl over a saucepan of simmering water; allow to melt slowly for 6-7 minutes.  Remove from the heat and stir well.

While the chocolate is melting place sugar, whole eggsyolks and vanilla extract into mixing bowl; whisk on a high speed until the mixture is doubled in volume, between 5 and 10 minutes.

Pour the melted chocolate mixture around the edge of the mixing bowl and sift the flour over the mixture.  Thoroughly fold everything together for 3-4 minutes.

Pour into pudding basins/ramekins to nearly the top and line up on a baking tray.  the individual puddings can be covered in clingfilm and frozen at this point if desired.


Baking time

15 minutes (from frozen)
14 minutes (from chilled)
12 minutes (from mixture)
The puddings should have risen and feel fairly firm to the touch.
Stand for 1-2 minutes before serving.
